A better tasting summer
If your red wine doesn't taste mature enough this summer, don't fret. Michelle Barton, a student from The University of Auckland, is researching a solution for the problem.
Michelle, a Bachelor of Science student is studying Wine Science over summer as part of a Summer Scholarship programme run by the Faculty of Science.
Red wine is traditionally made in oak barrels allowing oxidation to occur. However, the use of stainless steal barrels is becoming an increasingly common practice and can prevent the red wine from maturing, says Michelle.
