MIT Offers Certificate in Cookery

Manukau Institute of Technology has launched a new programme which aims to introduce students to the basic aspects of food preparation and hospitality.

The full time MIT Certificate in Cookery (Level 3) is offered in February and July each year and runs for 20 weeks.

The programme consists of three courses – Hospitality Service, Cookery Fundamentals and Restaurant Cookery.

As part of the programme students learn restaurant practices, service and hospitality knowledge, plus basic cooking techniques including kitchen safety, equipment operation, preparation and cooking of basic stocks, sauces and soups and practical skills in the restaurant saucier, larder and pastry areas.

Graduates of the programme can staircase onto the MIT Certificate in Advanced Cookery (Level 4), pending approval which leads onto the MIT Diploma in Culinary Practice (Level 5).
