Lovable and lively Kiwi food and travel expert Nici Wickes returns for Tegel World Kitchen season five launching on TV3 at 5.30pm on Sunday 29 July.
Building on the success of the previous seasons, this one is set to excite and tantalise your taste buds with a selection of Nici’s impressive recipes inspired by her latest travels in six different countries.
The 2012 Tegel World Kitchen series now screens in over 80 countries worldwide and is all over YouTube and Facebook with Nici responding to fans from around the globe who love her relaxed approach to life and cooking.
“It has been amazing connecting viewers from the entire world who just love watching Tegel World Kitchen. Of course the biggest honour I can get is when for example, an Italian person gets in touch to say how much they enjoy my Italian recipes, or someone from India tells me that my Gulab Jamun recipe is just like the one their mother-in-law makes!”
Tegel World Kitchen producer and director Martha Jeffries says she’s enjoying the success too. “Our successful formula of meeting real people, who share a passion for food, and discovering more about their culture through their food, makes the show interesting for our viewers. We try really hard to offer viewers some amazingly simple meal ideas to spice up their lives with and we’re proud of that.”
This season sees Nici travelling to Morocco (Fez and Marrakech), Brazil (Rio and Salvador), Trinidad, Spain, Portugal and New York where you will see her create delights such as a traditional New York cheesecake, a tagine, that most famous of Moroccan dishes, an almond-filled filo snake, a Trinidad chicken curry and a Caribbean Black Cake.
“The countries we visit this time are a phenomenally exotic and a sexy bunch” says Nici “Morocco, NYC, Rio, the Caribbean …wow, they all have mind blowingly fabulous food and I can’t wait for viewers to add the recipes to their repertoire,” continues Nici.
Among her many fun experiences, she also got to drink cocktails and hang out with the lifesavers on Copacabana Beach and check out the amazing surf at San Sebastian in Spain – “it made me realise just how much I love living by my own special beach at Port Waikato and that I should spend more time out on the water there.”
Tegel World Kitchen starts at 5.30pm on 29 July, 2012 on TV3, and runs for eight weeks.
Trinidad Chicken Curry
This curry is delicious and great for those who enjoy a milder curry. It has an East Indian influence and uses the one key ingredient so common to Caribbean cooking - the green seasoning mix.
Serves 4-6
Ingredients
3 Tegel Chicken Breasts – skin on, cubed
1 cup green sauce (recipe below)
2 tablespoons rice bran oil
1 onion, diced
1 teaspoon ground cumin
½ teaspoon turmeric
1-2 teaspoons garam masala
½ cup coconut milk
1 teaspoon mustard (optional)
½ teaspoon salt
¼ teaspoon black pepper
1 fresh mango, skinned and cut into 2cm cubes
Store bought roti
METHOD:
In a bowl, marinate the chicken in the green seasoning (recipe below).
Meanwhile, heat the oil in a medium-sized, heavy based saucepan. Add the onion and sauté until soft then add the spices (cumin, turmeric, garam masala) and fry for 2-3 minutes until aromatic. Add the chicken and green seasoning and stir until coated in the spice mix and simmer for 7-10 minutes or until the chicken is cooked through. Finally add the coconut milk, mustard (if using), salt and pepper. Gently stir in the mango and heat through.
Serve with rice and roti.
GREEN SEASONING:
Ingredients
1 green capsicum, de-seeded and chopped roughly
1 stalk of celery, roughly chopped
3 spring onions, roughly chopped
1 bunch of fresh coriander (about 1 cup)
4 cloves garlic
1 tablespoon fresh thyme (or 1 teaspoon dried)
¼ - ½ cup water
½ teaspoon salt
Blend all ingredients in a blender or food processor.
