Beetroot, celeriac and goat’s cheese salad with citrus dressing using the Kenwood Multipro Classic
Dressing
2 oranges
1 lemon
1 1?2 tbsp Dijon mustard
1 tsp honey
100 ml olive or rapeseed oil
Seasoning to taste
Salad
1?2 celeriac
2 raw beetroot
100 g goat’s cheese
For the dressing
Squeeze the juice out of the oranges and lemon.
Place the juice and the remaining dressing ingredients into the liquidiser and process for a minute.
For the salad
Attach the coarse grating disc to the food processor.
Peel the vegetables and then process.
Pour the dressing over the grated vegetables and ensure they are well coated.
Leave to marinate for 30 minutes.
Cut the goat’s cheese into chunks and scatter over the salad.
