Like a virgin “untouched” for the very first time
Sacred Hill Wines has created a unique-style Chardonnay to celebrate 25 years of wine making.
Called the Virgin Chardonnay, the limited edition 2011 varietal is a new style not seen from Sacred Hill’s reputed Rifleman’s Vineyard before.
Based on the renowned
French Chablis style, the Virgin Chardonnay has been
delicately handled from inception to bottling and is
‘untouched’ by oak.
The fruits of Sacred Hill’s
labour have been hand-picked then whole-bunch pressed
creating an elegant aroma and intensity of flavour.
Chief winemaker Tony Bish says the wine is called ‘Virgin’ because it is created from the first flush of pure pristine grape juice.
The wine has an intriguing fragrance of citrus and spring flowers complemented by nuances of crushed hazelnut and almond praline.
“Virgin Chardonnay has an amazing aroma. It’s like walking through a lemon orchard in full blossom,” says Tony.
To the palate, the wine has crisp fresh citrus flavours of grapefruit and lime which mingle with subtle honeydew melon and white nougat. The texture is delicately creamy with a crisp and citrus aftertaste.

Good things come to those who wait – although delightfully intriguing to enjoy now, patience will reap significant future enjoyment from this pure beauty. Ideally this wine should be cellared for five to ten years.
