New Zealand’s First Prosecco Style Wine
Ever increasing exposure to foreign wine blends and tastes has driven demand for a wider selection of sparkling wines to
suit every occasion and budget. Delight in the taste of the summer ahead with the affordable, elegant and easy to drink
addition to the Toi Toi range – the new ‘Prosecco NV.’
Toi Toi Prosecco NV has been produced to broadly reflect the origins and style of the Italian wine. As it is a wine that
thrives in a cool climate, a blend of grapes has been used primarily from the cool Marlborough region. To create this
elegant light-bodied bubbly, we have combined three classic 2010 vintage white grape varieties Riesling, Muller Thurgau
and Pinot Gris, resulting in an easy to drink wine lighter in style and alcohol.
Fermentation took place in stainless steel, using selected ‘aromatic’ yeast at cool temperatures. The wine was aged for
4 months on light lees to add mid-palate interest. After careful blending and ne-tuning in the winery, the wine was
lightly carbonated and bottled soon after.
This innovative sparkling white wine exhibits delicate avours of citrus, white peach and pear, with a touch of apricot
on the nose. A wine with lots of mouth appeal, the palate exudes freshness and zing. It has crisp acidity, and an
excellent bubbly mousse that rounds off this “I’ve had quite a lot of fun with it,” says Chris Young, the wine maker.
“For me, the best part about this wine is that freshness; its lovely vibrancy and clean fruity character.” Referring to
its appeal and drinkability, Chris goes on to say “It’s a great little wine, and not just for special occasions. It’s
also about relaxing after a hard week with a glass of bubbles in hand; which everyone can enjoy. It’s refreshingly
different, a very moreish alternative to any sparkling.”
Toi Toi Prosecco NV is ideal on its own but is equally delicious with canapés, especially blinis topped with smoked
salmon and crème fraîche. It goes particularly well with crisp summer salads, Italian style crumbed calamari and light
style pasta dishes.
