UCOL chef lecturer sweetens his audience
UCOL’s Palmerston North teaching kitchens were a chocolate lover’s heaven last week as UCOL Cookery Lecturer Ian Drew held a master class featuring the decadent ingredient.
The workshop attracted 30 guests. “It was a real mix of people from the industry,” says Ian. “We had people attending from Palmerston North and Feilding, from cake shops, cafes, bars and three chef lecturers from Weltec.”
Ian trained UCOL Cookery Student Samantha Christison to a gold medal for her entry in the Dreamy Gateau open class at the Wellington Food Fare in May.
He used the Gateau as a model to demonstrate several techniques including pre-crystalizing (tempering) chocolate; using transfer and texture sheets for garnishing; moulding and hand dipping chocolates and a variety of chocolate curls.
Ian also presented a plated dessert of Chocolate Terrine on Praline Feuilleté with Gianduja Mousse, Salted Caramel and Candied Nuts.
The demonstration was run in conjunction with the NZ Chefs Association Central Region who actively promote the professional development of its members through regular workshop and training sessions.
